In the Northeast, there are a wide variety of winter vegetables and fruits that are both healthy and easy to prepare. Sweet potatoes are a winter favorite, but usually only make an appearance on the dining table under a cloud of marshmallows. Sweet potatoes not only taste good, but are packed with vitamins and minerals, including Vitamin A, Vitamin C, iron, folate and even protein.They also make a great base for a simple (and sweet) mashed potato.


Ingredients:
2 large Sweet Potatoes
Pumpkin Pie Spice
Brown Sugar
Milk
Orange Juice
1. Peel the potatoes and cut them into 2 inch cubes.
2. Place potato cubes in medium sized pot and cover with water, then bring the water to a boil. The potatoes won’t take long and you can check by sticking a fork into them. When they slide easily off the fork, they are done.
3. Drain the water and mash the potatoes in the same pot. Add about a teaspoon of pumpkin pie spice (I know you have that around from the holidays), and a tablespoon of brown sugar. Pour in milk and orange juice for the count of 2. Add a dash of salt and pepper to taste. Enjoy!
